Alise Matos, Owner and Sommelier

Alise Matos brings equal parts talent and experience to Veloute @ Palace Pier.

With over 25 years of experience in the hospitality industry, Alise Matos combines her love of wine with customer service excellence. Her experience at some of Toronto’s top restaurants (Opal Jazz Lounge, The Fifth, Windsor Arms Hotel and Mistura) prepared her to be a seasoned event planner and sommelier.

Alise is a member of the Canadian Association of Professional Sommeliers.

Fawzi Kotb, Owner and Executive Chef

Fawzi Kotb brings a sophisticated depth of knowledge to Veloute @ Palace Pier.

A formal private Chef to the royal family of Persian Gulf, Chef Fawzi mastered his craft and achieved the level of Saucier at the Marriott Hotel Champ-Elysees in Paris, France. Since coming to Toronto, Chef Fawzi has continued to excel and succeed at a number of well-established fine dining restaurants, including, Centro Grill and Wine Bar as Saucier and contributing creative new development.

At Peppino’s on the Beach, Executive Chef Fawzi’s menu rapidly elevated the bistro to one of the top ten restaurants in the city. His ongoing achievement at Opal Jazz Lounge has won him critical acclaim and a vast loyal following among Toronto foodies.
